Dinner Hack: Slow Cooker Balsamic Pot Roast & Idahoan® Mashed Potatoes

Any mom who is successful at getting a homemade meal on the table every night will tell you she is utterly dependent on her slow cooker (the ultimate dinner hack), and so am I. If I want my family to feel they are getting the best meal that does not require much effort, I have to make my slow cooker balsamic pot roast. So moist, flaky and rich with flavor, it is begging for one side dish and one side dish only: mashed potatoes.

I was his person. When I took home Elijah in 2009, I thought Moses would be excited. He appeared more annoyed than anything. Matt and I married in 2013. The dogs were not thrilled with Matt, especially Moses. 2015 brought us our first child. The dogs liked our son, until our son started showing a lot of interest in them. Small dogs can be easily intimidated by toddlers. So in 2017, we adopted Pete, an Australian Shepherd, Border Collie mix from Saving Grace Animal Shelter. Our second son arrived in 2018 around the same time we moved to the farmhouse where we currently live. The dogs have a whole acre to run around, and they hardly noticed the arrival of a new baby.
